Domaine des Chenes, Rivesaltes Ambré

Very old white and grey Grenache (50%) and old Macabeu (50%). Yields less than 20hl/ha.on very stony limestone located at the foot of the cliffs. Harvest is done manualyand the wine is vinified traditionally followed by a mutage (addition of alcohol) at middle fermentation. It is then aged for seven years in barrels (220L).
Complex nose combining citrus fruits, toasted almonds, dried figs and hazelnuts. The mouth is an alliance between the delicacy of the taste and the subtlety of the aromas. It can be enjoyed as an aperitif or with a dry goat cheese, walnut cake or soft white cheese. Stunning!!
